Siau Ambon Mace is derived from the aril of the nutmeg fruit Myristica fragrans Houtt. Siau Ambon Mace has a colour profile of vibrant red, which will turn to orange and eventually yellowish as the drying process continues. The flavour of Siau/Ambon Mace is similar to Siau/Ambon Nutmeg, however it is slightly stronger and has a spicy/pungent flavour profile with savoury scent. It is not as sweet as the nutmeg is.
